Soft Set Honey
 

Creamed honey is a blend of early and late season crop selected to give a flavour some honey with a fine soft set creamed texture on the palate.
 
Early season honey in the Midlands inevitably has a high proportion of oil seed rape nectars due to the large volume of yellow rape fields in our area each Spring. This honey is  quick to crystallise with a grittiness and hard finish due to the large natural crystal size as it granulates. 
 
Therefore, the early season crop is blended with a late season honey which has a much richer flavour and less propensity to crystallise. The resulting blend is then passed through a creaming process where the honey is cold stirred and rested over a period of days.
 
This process reduces the crystal size within the honey by abrading them together in the mixing process. The result is a fine creamed honey that has a full flavour and the consistency and texture of soft butter.
 
A honey with a wonderful blend of flavour with a smooth  consistency on the palate that stays put on your toast.
